Recipe: Sharon Higaki’s German Apple Cake
Ingredients:
- 3 eggs
- 2 cups sugar
- 1 cup vegetable oil
- 1 tsp. vanilla
Add the above wet ingredients to a bowl and mix until well combined (I do this by hand) then add the following dry ingredients:
- 2 cups all-purpose flour
- 2 tsp. cinnamon
- 1 tsp. baking soda
- ½ tsp. salt
In another bowl, combine:
- 4 cups chopped peeled tart apples (medium diced). Best made with
Bardenhagen apples! - ¾ cup chopped pecans
Directions
Fold apples and pecans into the thick batter mixture until apples are coated. Pour into a greased 9 X 13 X 2-inch pan.
Bake at 350 degrees for 55-60 minutes or until a toothpick inserted in the center comes out clean. The top will be a little “crusty” but will soften. Cool pan on a wire rack. Can be served warm or cold with a dusting of powder sugar. Great
with vanilla ice cream too! Enjoy!!
